Sommelier and restaurateur
My story with wine began in 1991, when I started working at the Delicja restaurant in Oborniki. My first contacts with the wine market and everyday work at the table gave me a solid foundation in this field. The key year was 1993, when I met Fernando Klee, sommelier to the Grand Duke of Luxembourg, who introduced me to the professional world of wine. In 1995, I received my first award from Wine Spectator for my wine list, which was a great distinction in Poland and Central and Eastern Europe.
In the years 1996-2004, I focused on promoting wine culture, co-founding the Association of Sommeliers in Poland and selecting wines for Queen Elizabeth II of England during her visit to Poland. I also organized wine festivals, including Beaujolais Nouveau, for which I received the title of Knight of Burgundy in 1998.
Since 2004, I have been running the Delicja restaurant in Poznań with my wife Agnieszka, focusing on the highest quality of catering services and wines. In 2005, I organized the first auction of paintings and wines in Poland. I am an ambassador of Tenuta Luce Della Vite wines from Tuscany and the only Knight of Chablis in Poland. Every year, I organize a Chablis wine festival.
I plan to further develop wine culture in Poland through the Wine Academy in Delicja, sharing knowledge about the art of wine, responsible alcohol consumption and the art of service and restaurant hospitality.
The best wines are the ones we like, although it's worth remembering a few rules: lighter before heavy, white before red, dry before sweet. Sparkling with everything is best as an aperitif
It's not that simple, but here are some basic tips:
- Sparkling: 0d 6°C to 12°C
- White: 10°C to 14°C
- Red: 16°C to 18°C
It is worth selecting wine for each course during lunch or dinner, but remembering about the appropriate quantity, following the principle that less is more.
It is best to drink wines that are appropriate to the origin of the product, following the principle of similarity. Same region, same soil, same climatic conditions. If we do not feel confident in choosing wines from a wine list on our own, it is always worth seeking advice from a sommelier.
A sommelier is a person in a restaurant who selects wines for dishes, can also purchase wines and manage strong alcoholic and non-alcoholic beverages, tastes wine before serving it to guests.
Historically in Poland, a Cupbearer - a court official of the Crown of the Kingdom of the First Republic. His responsibilities included managing beverages during royal court feasts. He would serve the king a cup, having first tasted the drink, which was intended to detect potential poison.
The most famous Cupbearers were the voivode of Sandomierz Jan Sobiepan Zamoyski, the Grand Crown Hetman Jan Klemens Branicki, and the later King of Poland Stanisław Leszczyński also began his career as a cupbearer.
